Foods that rock when you're trying to be healthy:
 
 





  • Sunspire Chocolate chips. These things ROCK. They're organic, soy based, and so yummy! 2 tablespoons are only 70 calories. Oh Fair Trade too! www.transfairusa.org. I'll pack these along side my fruit or stuff raspberries with them for a healthy snack. They're awesome in oatmeal too.

  • Pure Almond Original Nutrition Label

  • Silk Pure Almond Original Almond Milk. At 60 calories, this is a staple in my daily caloric intake. There's an unsweetened version with 30 calories per serving and a sweetened vanilla with 90 calories per serving, but the original version is by far my fave. I feel like Goldilocks. This one is JUST RIGHT! The thing that got me to try almond milk was the money back guarantee on the side of the carton. I've been drinking this stuff since August and haven't looked back. 
  • PB2 Powdered Peanut Butter & Chocolate Peanut Butter. I absolutely adore peanut butter. When I was a kid I'd sneak into the jar and get a spoonful for a snack. This was highly recommended on another blog I follow so being open to new things I thought I'd give it a try. It is AMAZING! It's preservative free and contain no artificial sweeteners. At only 45 calories per 2 Tbsp serving there are only 13 calories from fat & 0 grams saturated fat which is awesome considering regular peanut butter is 190-200 calories per 2 Tbsp serving with 130 calories from fat and 3 grams of saturated fat. I eat this almost everyday. It's great on bagels, mixed with honey & cinnamon in plain greek yogurt, or in a smoothie or protein shake. It is a little pricey, about $5 a jar, but it lasts me several weeks.

    • Veggie Slices Swiss, 1 Slice (1 serving): calories: 35, fat: 2g, carbs: 1g, protein: 3g  As much as I love my chocolate & peanut butter, I'm also a cheese fanatic. I love it on my sandwiches or even as a snack. In looking to eat healthy I found this stuff. It's another soy based product but tastes like swiss cheese.           Apple Cinnamon Banana Muffins

          I'm always looking for something healthy to eat in the morning and with bananas quickly ripening I knew a traditional banana muffin recipe wouldn't be the best thing for my diet. I also wanted something that combined apples & cinnamon for fall. I'm very happy with the way these turned out. I plan on freezing the leftovers to microwave in the mornings for a quick breakfast on the go. 

           Ingredients: 
          3 medium (7") Bananas 
          2 Medium Apple 
          1 cup Unsweetened Applesauce 
          6 oz (170g) Chobani - Apple Cinnamon Yogurt 
          1 1/2 cups Oatmeal 
          4 packets of Truvia 
          4 Tbsp. Carrington Farms - Organic Milled Flax Seeds 
          1 tsp Ground Nutmeg 2 tsp Ground Cinnamon 
          1 tsp Baking soda 
          2 Tbsp Sliced Almonds (garnish) 

          Directions: 
          Mash bananas. Core and chop apples. (I chose to leave the skin on) Combine all ingredients in a bowl & mix thoroughly. Pour into lined muffin cups & garnish with almond slices. 
          Bake at 350 degrees for 25-30 minutes. Enjoy!

          Breakfast Idea: Strawberry Banana Chocolate Chip Muffins

           


          Ingredients :
          •1 Small Banana
          •3 Tbsp Vegan Chocolate Chips (I used Sunspire)
          •1/2 Cup Sliced Strawberries
          •1/3 Cup Ground Flaxseed
          •1 Cup Whole Grain Oats
          •1/4 Cup Diced Avocado
          •1 Packet Truvia
          •1 Tsp Unsweetened Cocoa Powder
          •1/3 Cup Almond Milk
          •1/4 Cup Unsweetened Applesauce 
          Preheat Oven to 350
          Sift together Oats, Truvia, Cocoa Powder and Flaxseed.
          Add Applesauce and Almond Milk
          Mix together Well.
          Add Avocado and Bananas. Use an electric mixer to speed things up. (You can mash with large spoon if you don’t have one but your batter may be chunky)
          Mix until smooth. Your batter will be very thick almost like oatmeal cookie dough.
          Stir In Strawberries and Chocolate chips. Save 1 Tbsp of the Chocolate Chips 
          Evenly distribute the batter into 6 muffin liners in a baking sheet. Top with remaining chocolate chips
          Bake for 10-14 Minutes.  

          There are so many different flavors running through the muffin.The avocado, while weird at first, really helps keep these muffins moist along with the apple sauce. This recipe was adapted from Taralynn's Blog- Undressed Skeleton . If you haven't read it yet you should check it out. She just posted a recipe for healthy pumpkin pie oatmeal I'm dying to try. When I make it I'll be sure to post pics! I didn't post any of my own this time because my muffins came out exactly like the photo from the blog. How cool is that?!?
          These are perfect if you need a to go breakfast. Make a bunch, freeze them and microwave them throughout the week.
